Sea Buckthorn Recipes

Many people ask us if Sea Buckthorn is edible. It is not only edible, but it is also delicious! The tartness of the fruit goes well with a number of other traditional foods and ingredients, especially chocolate and apples. SEA BUCKTHORN AND APPLE TART
Sweet toffee apples and tart seabuckthorn berries compliment each other nicely. 


PASTRY  (or your favourite pastry)

1 ½ C.      Flour
¼ tsp.        Salt
1/8 tsp.      Baking Powder
1 Tbsp.      Sugar
10 Tbsp.    Unsalted Butter
3 – 5 Tbsp. Ice Water

Combine first four ingredients, cut in butter, then add water one tablespoon at a time until the dough just holds together.  Chill for one hour.  Roll out on a lightly floured surface and fill 9” pie pan.  Prick bottom with a fork and bake at 400 for ten minutes.

FILLING

5           Apples, peeled, cored, & sliced thickly
½ C.     Seabuckthorn berries
8 Tbsp. Brown sugar
3 Tbsp. Flour
Butter

Cover the prepared crust with apples and sprinkle with seabuckthorn berries.  Mix sugar and flour in a small bowl and sprinkle over the fruit.  Dot generously with butter.  Bake at 400 for an additional 20 – 25 minutes or until apples are softened and the sugar mixture has melted into a delicious toffee.

 

SEABUCKTHORN SALSA

This salsa is delicious served warm with grilled tuna.  Chilled it can be used like any salsa.

1      Red Pepper, diced
1      Green Pepper, diced
1      Red Onion, diced
1      Jalapeno Pepper, finely diced
1 C. Fresh or Frozen Seabuckthorn Berries

1 C. Vinegar
½ C. Sugar
Salt to Taste

Boil all ingredients for 5 minutes.  Remove from heat and add berries
